I've been waiting for a single cool morning. Well, it's 12 degrees right now and supposed to get sharply warmer over the next couple hours, so I'm seizing my moment and striking while the iron is... coolish.
I'm finishing up with the year's final #coldsmoke project, four and a half kilograms of beef navel cured like bacon; brown sugar and black pepper, applewood cold smoke. The monitor I built is recording 11.5 and 12 degrees.
I'll feel bad if this fails, but I'd feel worse if I didn't try.
