2 weeks out and then 2 days in fridge and this sauerkraut (see 👆🏽) is outstanding. Great crunch and texture and tartness. Loved the flavor - definitely going with randhuni again. I only reluctantly agree with partner and kid that parts are too gingery - bite and competing (I did put in a bit of slivered ginger, will skip next time, just keep the jalapeño).
