Catching up on this past few days of Mastodon and seeing people talk about LUTs due to the release of 'Kino' reminded me I never posted how I ended up solvig this.
Yes, LUTs are the right way. I also ended up building everything by hand instead of relying on GPUImage and works flawlessly. This was the end result (see video). If you want to try it yourself, download DUMPS from the App Store and use 'xmollv' as the invite code 😜
